About one-third of the way through the loaf of Brioche bread I made Friday night, I realized the loaf was slightly undercooked. The tell-tale sign? A big, gaping hole in the middle of the bread. So sad, I know. Especially because I was slicing the bread to make myself a grilled cheese sandwich. Not one who likes to waste food I decided to turn the disastrous middle of the Brioche loaf into brunch: crispy and chewy bites of Brioche French toast.

ingredients.

  • 6 slices of homemade bread, cubed (approximately one and a half-inch pieces)
  • 1/4 c. flour
  • 1/2 c. milk
  • 1 egg

directions.

  1. Mix flour, milk, and egg and pour into a shallow dish. Place bread cubes in the egg mixture and let soak for a few minutes on each side.
  2. In a small pot, heat oil (I used canola) over medium heat. Place the bread cubes in the pot and fry until golden brown on each side.
  3. Sprinkle with powdered sugar. Serve with butter and maple syrup, if desired.
