Elvis Impersonator Pancakes

I’ve read up on the topic of Elvis and his fondness for peanut butter, banana and bacon sandwiches and apparently it isn’t conclusive whether his favorite sandwich involved bacon or not. But it definitely involved peanut butter and banana. (A sandwich I lived on as kid!) That being said, I named these pancakes Elvis Impersonator Pancakes instead of just Elvis Pancakes as this meal is my impersonation of Elvis’s favorite sandwich. Personally, I think the King was a fan of bacon.

I believe this pancake is a very manly pancake – something a husband or boyfriend would like or request for his birthday breakfast. Not sure how much chicks would dig this dish. I kept eating it trying to decide whether or not I liked it. Quite frankly, the combination of bananas and bacon perplexed me a bit. I topped these pancakes with Maple Cream Sauce, which was a wonderful addition to the already complex flavor combination, and peanut butter sauce. I would say these pancakes can go without the additional peanut butter sauce and just a whole big bunch of Maple Cream Sauce instead.

ingredients.

  • 2 1/2 c. of flour
  • 1 tsp. salt
  • 2 T. baking powder
  • 1 tsp. baking soda
  • 4 T. white sugar
  • 3 egg whites
  • 2 c. buttermilk
  • 1/2 c. heavy cream
  • 1/2 c. of sour cream
  • 4 T. melted butter
  • 2 tsp. vanilla
  • sliced bananas
  • cooked, chopped bacon
  • peanut butter sauce (melt peanut butter and thin it out with some melted butter)
  • Maple Cream Sauce, for serving
  • Peanut Butter Whip Cream, for serving

directions.

  1. Take all of your dry ingredients and sift them together well.
  2. In a small cup, combine the cream, buttermilk, sour cream, vanilla, cooled melted butter and egg whites.
  3. Make a well in the dry ingredients and pour the liquid ingredients into the well.
  4. Mix until  combined.
  5. To cook the pancakes, spread them out on the oiled griddle with the back of your spoon, the batter is thick. Drizzle with peanut butter sauce and push slices of banana and bits of bacon down into the batter using the edge of a spatula.
  6. Flip the pancakes when you see a few bubbles on the top but more importantly, when you see that the edges are cooked. Because this is such a thick batter, the bubbles are not a great indicator of when you should flip. Remove from the griddle, stack the pancakes, garnish with additional chopped bacon, sliced bananas, Maple Cream Sauce and Peanut Butter Whip Cream and enjoy!
