
When I was searching for my last cake recipe, I found an easy lemon pie recipe to try amongst the many recipes in The Electric Company Secrets of Successful Cake Baking pamphlet Grandma Mo sent me. (This recipe is very similar to a Betty Crocker Lemon Sponge Pie recipe she also sent me.) I put this recipe at the top of my list since it’s been so long since I’ve made a pie. I used to make several pies a week! I’ve never made a bad pie and this recipe is no exception.
ingredients.
- 1 unbaked pie crust
- 1 T. butter
- 1 c. sugar
- 2 eggs, whites and yolks separated
- 2 T. flour
- 1/4 tsp. salt
- 1 c. whole milk
- 1 lemon (juice and zest)
directions.
- Prepare pie crust.
- Cream butter and sugar. Stir in egg yolks, flour, salt, milk, lemon juice and rind.
- Fold in stiffly beaten egg whites. Pour into an unbaked pie shell.
- Bake at 450 degrees for 15 minutes. Reduce heat to 325 degrees and bake for 25 more minutes. The top will be like sponge cake and the bottom, lemon custard.
