I needed a pico de gallo to go with homemade tortillas made by my coworker, Kellie, the day I got shanghaied into bringing food into work. Full from having had Buffalo Chicken Pizza and making Cilantro White Bean Hummus earlier, I only got a taste of it the night I made it and before the flavors had melded.
The following day at work I asked my coworker Monique to taste test the pico de gallo and she said it was good – and she doesn’t like salsa type dishes. You can adjust any of the ingredients to suit your tastes.
- 4 c. seeded, diced tomatoes (about 6 or 7 roma tomatoes)
- ½ medium red onion, diced
- 1 jalapeno, diced
- 2 large garlic cloves, minced
- juice of 1 or 2 limes
- 2 T. cilantro, chopped
- kosher salt
*In a bowl combine all ingredients. Adjust salt and amount to taste.
