I found the idea of salmon + nachos at once intriguing and slightly disgusting. The most out-on-a-limb I normally go when eating nachos is subbing chicken for beef. But I had this one lone salmon fillet in my fridge this week and didn’t feel like having salmon and spinach again. So I got a little creative (with some help from the internet) and came up with a plate of homemade nachos.

If I had planned this out, I would have made sure I had guacamole on hand. Since this was a last-minute decision I didn’t have any; however, I had loads of sour cream which is equally as good in its own way.

I’m not going to provide any measurements for my recipe because I believe when it comes to homemade nachos you should use the amount of ingredients that pleases you. What pleases me is lots of cheese and a fairly light amount of salmon. Too much salmon on your chip is … Well … Just too much!


  • salmon fillets
  • salt and pepper
  • tortilla chips
  • black beans
  • shredded cheese
  • Your favorite toppings: guacamole, sour cream, shredded lettuce, jalapeno slices, diced tomatoes, pico de gallo or salsa


  1. Preheat oven to 350 degrees. Season salmon fillet with salt and pepper. Place on a foil-lined baking sheet or broiling pan and bake for about 15 minutes. My salmon was not cooked through. Don’t worry if yours isn’t either because it will continue cooking when you throw the nachos in the oven.
  2. Meanwhile, cover an oven-proof plate evenly with a layer of tortilla chips (my favorite choice is Juanita’s). Cover chips with shredded cheese – as much or as little as you like. Sprinkle black beans evenly over chips. (Note: You can use canned black beans, but make sure to rinse them thoroughly first. I like to make my own black beans, which will need to be done the night before.)
  3. Remove the salmon from oven, remove the bottom skin and shred with a fork. Place shredded salmon evenly over chips and beans. Sprinkle with additional cheese, if desired.20140530-211723-76643495.jpg
  4. Return to oven and bake for 8 to 10 minutes, until cheese is melted. Serve with your favorite toppings.
