My dad loves caramel and is always looking for caramel that is not made with corn syrup – this is not an easy thing to find in your local grocery store. Most often you’ll find a corn syrup free caramel sauce with an organic disclaimer on its very expensive jar.
I didn’t think you would be able to get caramel out of these three ingredients, but sure enough – you do.
- 1 c. whipping cream
- 1 c. sugar
- 3/4 c. water
- In a saucepan, bring cream to a boil then remove from heat.
- In a separate saucepan, mix sugar and water and bring to a boil. Wash down any crystals that form on the sides with a brush dipped in water. (This seems like a weird technique but I couldn’t find a better way to do get the crystals off – and I tried!). Continue boiling until mixture tuns a mahogany color (this seemed to take a really long time – I’m guessing about 15 to 20 minutes).
- Remove from the heat and then immediately take a large whisk and slowly mix in the cream. There will be hot steam coming up so be very careful. (I don’t remember a lot of steam at this point.) Place caramel over a medium flame until it boils. This will take 30 to 60 seconds (mine boiled immediately). Do not stir. Strain into a heatproof container.
