These no-bake Scandinavian cookies have a hint of coffee flavor and pack the perfect chocolate punch. I like them straight out of the freezer.
ingredients.
- 3 1/2 c. quick oats
- 1 c. sugar
- 1/2 c. cocoa powder
- 1 tsp. vanilla extract
- 10 T. butter, room temperature
- 1/2 c. cold coffee
- shredded coconut, for rolling.
directions.
- In a food processor, pulse together oats, sugar and cocoa powder to combine. Add vanilla and butter and pulse again, just to mix. Add coffee and pulse just until mixture has come together. Remove the blade and give the mixture a stir to ensure the ingredients are evenly distributed. Refrigerate dough for an hour.
- Place coconut in a shallow bowl. Roll dough into 1 1/4-inch balls then roll (or more accurately ‘press’) each ball in(to) the coconut. Refrigerate or freeze.
The hardest/most annoying part about this cookie is rolling the dough. It would be helpful/faster if you have a helper. The coconut works nicely, but I kind of wish I had dipped these in melted chocolate and then sprinkled them with coconut.
