Sweet Potato Fries


My friend Darcy who lives in Houston, Tex., invited me to spend the weekend with her while her husband was out of town golfing. After two nights of complete shenanigans out on the town (San Antonio, night one; Houston, night two) we decided we needed a night in for a change. Darce is obsessed with fitness and healthy eating, which means we make an odd pair when we go out to dinner. She’s always eating salad as opposed to my grilled cheese. One of the recipes she’s been obsessed with recently is Sweet Potato Fries. This is the version she makes at home:

ingredients.

  • two sweet potatoes
  • salt and pepper
  • olive oil
  • cinnamon
  • crushed red chili flakes

directions.

  1. Wash the sweet potatoes and pat dry. Cut into thin round slices and bake in the oven at 450 degrees for 20 to 25 minutes, flipping halfway through to brown both sides.
  2. Remove from oven toss in a mixture of equal parts cinnamon and crushed red chili flakes and transfer to a large skillet. Over medium-high heat cook the potatoes in olive oil until crisp. Season with salt and pepper.
