What’s a better way to use up day-old focaccia bread? I can’t think of anything else besides a three-cheese grilled cheese sandwich (other than by adding bacon!).
Add tomatoes, avocado, onion, spinach or anything else you like. My all-time favorite combo is bacon, avocado, and sliced tomato. Layer your extras between slices of your favorite cheese and slather both outsides of the bread with butter. Press in your Panini press (or George Foreman grill!) or cook in a covered skillet over medium-low heat until both sides of the bread are crispy and the cheese is melted.
